Ingredients
1 cup quinoa, rinsed
2 cups water
10 white button mushrooms, sliced
2 apples, peeled, cored and chopped
1/4 cup pine nuts
1/3 cup raisins
2 cloves garlic, minced
1 sprig fresh rosemary, chopped

Directions
- Place quinoa in a pot and rinse. Add water and cook on medium heat for about 20 minutes.
- Combine mushrooms, apples, pine nuts, raisins, garlic and spices in a large bowl. Add cooked quinoa and stir.
- Pack stuffing lightly inside of an uncooked turkey and roast turkey as directed. Or, serve quinoa stuffing on the side.
