Chickpea and Sweet Potato Patties

Lightly spiced chickpea and sweet potato patties are a great side dish.

Serves: 6-8 patties
Prep Time: 15 min
Cooking Time: 15 min
Total:  30 min

Ingredients
1 tin chickpeas, drained and rinsed
3/4 cup fresh parsley, finely chopped
1/4 cup bread crumbs
1 egg
1 medium sweet potato, cooked and mashed
2 cloves garlic, pressed
1 small onion, diced
1 tbsp. olive oil
1/2 tsp. paprika
1 tsp. cumin
1/4 tsp. cayenne pepper
salt and pepper
flour, for dusting

Directions
  1. In a skillet, heat olive oil.  Sautee onions and garlic until translucent.  
  2. Add paprika, cumin, cayenne pepper, salt and pepper and stir.  Heat for 1 minute until fragrant.
  3. Remove from heat and cool.
  4. Put chickpeas, parsley, breadcrumbs, egg in a food processor.  Pulse until it binds together.
  5. Stir in mashed sweet potato, onion, garlic and spices.
  6. Form into patties, about 1.5" thick.
  7. Coat both sides in flour and then pan fry in oil for 3 minutes on each side.
  8. Serve patties garnished with sour cream.
