1 tin chickpeas, drained and rinsed
3/4 cup fresh parsley, finely chopped
1/4 cup bread crumbs
1 egg
1 medium sweet potato, cooked and mashed
2 cloves garlic, pressed
1 small onion, diced
1 tbsp. olive oil
1/2 tsp. paprika
1 tsp. cumin
1/4 tsp. cayenne pepper
salt and pepperflour, for dusting
Directions
- In a skillet, heat olive oil. Sautee onions and garlic until translucent.
- Add paprika, cumin, cayenne pepper, salt and pepper and stir. Heat for 1 minute until fragrant.
- Remove from heat and cool.
- Put chickpeas, parsley, breadcrumbs, egg in a food processor. Pulse until it binds together.
- Stir in mashed sweet potato, onion, garlic and spices.
- Form into patties, about 1.5" thick.
- Coat both sides in flour and then pan fry in oil for 3 minutes on each side.
- Serve patties garnished with sour cream.
