Classic Pancakes

A scrumptious breakfast of classic pancakes and fruit.

Serves: 6 pancakes

Cooking Time: 10 min
Total:  15 min

Pancakes with blueberries
Ingredients
1 cup flour (can use a white/whole wheat mix)
1 1/2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1 cup milk or almond milk
1 tsp. vegetable oil
1 egg
1 tsp. vanilla extract

Additions
blueberries
raspberries
chocolate chips
grated apple
strawberry pieces
banana slices

Directions
  1. In a medium bowl combine flour, sugar, baking powder and salt.
  2. In a separate bowl whisk together milk, oil, egg and vanilla.
  3. Add wet mixture to dry mixture and gently stir until combined.
  4. If desired, add about 1/2 cup of fruit or 1/4 cup of chocolate chips into the mixture.
  5. Heat a non stick skillet over medium heat.  Ladle about 1/4 cup of batter into the pan and cook for 1-2 minutes, or until bubbles form.
  6. Flip with a spatula and cook for another minute.   Repeat until all batter is used.
  7. Serve immediately with maple syrup and fresh fruit.
