Serves: 6 pancakes
1 cup flour (can use a white/whole wheat mix)
1 1/2 tbsp. sugar
1 tsp. baking powder
1/2 tsp. salt
1 cup milk or almond milk
1 tsp. vegetable oil
1 egg
1 tsp. vanilla extract

Directions
- In a medium bowl combine flour, sugar, baking powder and salt.
- In a separate bowl whisk together milk, oil, egg and vanilla.
- Add wet mixture to dry mixture and gently stir until combined.
- If desired, add about 1/2 cup of fruit or 1/4 cup of chocolate chips into the mixture.
- Heat a non stick skillet over medium heat. Ladle about 1/4 cup of batter into the pan and cook for 1-2 minutes, or until bubbles form.
- Flip with a spatula and cook for another minute. Repeat until all batter is used.
- Serve immediately with maple syrup and fresh fruit.
