Serves: 4
1 1/4 cups water
1 tbsp. extra virgin olive oil
pinch of salt
2 tsp. orange zest
1 cup unflavoured couscous
1/2 cup pistachios, shelled, toasted and chopped
1/2 cup dried cherries, chopped
1 tbsp. unsweetened cocoa powder
2-3 tbsp. fresh mint, chopped
1/2 tbsp. honey, agave or rice syrup
1/8 tsp. chili powder (optional)

Directions
- In a pot, combine water, oil, orange zest and salt, and bring to a boil over medium heat.
- Stir in couscous, remove from heat and cover with a lid. Let stand for 5 minutes, until all of the liquid has been absorbed. Fluff with a fork.
- Add pistachios, cherries, cocoa powder, chili powder and oil. Add salt to taste.
- Stir in honey to make couscous sweeter.
- Serve at room temperature.
