Not a Typical Couscous Salad

A fruity and chocolate-y couscous salad to spice up your plate.

Serves: 4
Prep Time: 8-10 min
Cooking Time: 5 min
Total:  15 min

Ingredientssweet
1 1/4 cups water
1 tbsp. extra virgin olive oil
pinch of salt
2 tsp. orange zest
1 cup unflavoured couscous
1/2 cup pistachios, shelled, toasted and chopped
1/2 cup dried cherries, chopped
1 tbsp. unsweetened cocoa powder
2-3 tbsp. fresh mint, chopped
1/2 tbsp. honey, agave or rice syrup
1/8 tsp. chili powder (optional)

Directions
  1. In a pot, combine water, oil, orange zest and salt, and bring to a boil over medium heat.
  2. Stir in couscous, remove from heat and cover with a lid.  Let stand for 5 minutes, until all of the liquid has been absorbed.  Fluff with a fork.
  3. Add pistachios, cherries, cocoa powder, chili powder and oil. Add salt to taste.
  4. Stir in honey to make couscous sweeter.
  5. Serve at room temperature.
