Feta Stuffed Roasted Mini Peppers

Roasted mini peppers stuffed with cheese are a great appetizer or addition to a salad.

Serves: 6-8
Prep Time: 10 min
Cooking Time: 15-20 min
Total:  30 min

Ingredients
15-20 mini bell peppers
1/2 cup feta or goat cheese, crumbled
1 clove garlic, pressed
extra virgin olive oil, to garnish
balsamic vinegar, to garnish
1/2 tsp. dried oregano
fresh cracked pepper

Directions
  1. Wash and seed mini peppers.
  2. Broil peppers in the oven for 15-20 minutes, until the skin becomes charred.
  3. Place in a large bowl and cover with a lid.  The steam make removing the skin of the peppers easier.
  4. Stuff peppers with a bit of crumbled cheese.
  5. In a small bowl, whisk oil, balsamic, garlic, oregano and pepper.  Drizzle over stuffed peppers and serve.
  6. Add to salads, eat with a toothpick or serve with fresh bread.
