Serves: 6-8
15-20 mini bell peppers
1/2 cup feta or goat cheese, crumbled
1 clove garlic, pressed
extra virgin olive oil, to garnish
balsamic vinegar, to garnish
1/2 tsp. dried oregano
fresh cracked pepper

Directions
- Wash and seed mini peppers.
- Broil peppers in the oven for 15-20 minutes, until the skin becomes charred.
- Place in a large bowl and cover with a lid. The steam make removing the skin of the peppers easier.
- Stuff peppers with a bit of crumbled cheese.
- In a small bowl, whisk oil, balsamic, garlic, oregano and pepper. Drizzle over stuffed peppers and serve.
- Add to salads, eat with a toothpick or serve with fresh bread.
