Ingredients
1 cup whole raw almonds
3/4 cup pitted medjool dates
1 tbsp. lemon juice
1 tsp. lemon zest
1/4 tsp. ground ginger
4-5 tbsp. unsweetened shredded coconut, for rolling

Directions
- Add almonds to the work bowl of a food processor and pulse to grind.
- Add the rest of the ingredients and pulse until combined.
- Taste and adjust mixture if necessary. It should be slightly sticky and easily rolled into balls.
- Roll teaspoon sized balls of mixture. Then, coat with coconut flakes.
- Serve or store refrigerated in an airtight container for a couple days.
