Spaghetti Squash "Pasta"

Make a spaghetti squash into pasta for low-carb alternative to traditional grain pasta.

Serves: 4
Prep Time: 2-3 min
Cooking Time: 30 min
Total:  30 min

Ingredients
1 medium spaghetti squash
choice of pasta sauce
Parmesan cheese to garnish (optional)

Directions
  1. Slice squash in half lengthwise and place each half facing down on a parchment paper lined baking sheet.
  2. Bake in a preheated oven at 350F for 25-30 minutes, or until the outer shell can easily be pricked with a knife.
  3. Remove from oven and turn squash halves over.  Scoop out seeds and seed pulp, and discard.  Using a fork, scrape the inside flesh to form "spaghetti" like pieces.
  4. Serve spaghetti squash topped with your choice of heated pasta sauce and garnished with Parmesan cheese.
