PB&J Blondies

Fun to make and yummy to eat, these PB&J blondies are definitely a hit!

Serves: 10-12 squares
Prep Time: 10 min
Cooking Time: 25-30 min
Total:  35-40 min

Ingredients
1 cup flour
1/2 tsp. baking powder
1/8 tsp. baking soda
pinch of salt
1/3 cup butter or margarine, melted
1 cup brown sugar, loosely packed
1-2 tsp. vanilla extract
1 egg, at room temperature
2-3 tbsp. natural peanut butter
2-4 tbsp. mixed berry jam

Directions
  1. In a small bowl, combine flour, baking powder, baking soda and salt. Set aside.
  2. In a large bowl, mix butter, brown sugar and vanilla extract with an electric mixer.
  3. Add egg and mix well.
  4. Slowly add dry ingredients and mix until almost combined.  Fold with a spatula.
  5. Spread batter in a lightly greased 8"x8" baking pan.
  6. Place teaspoonfuls of peanut butter and jam on top of batter.  With a knife, swirl peanut butter and jam throughout batter.
  7. Bake in a preheated oven at 350 F for 25 minutes, or until an inserted toothpick comes out clean.
  8. Cool and cut into pieces.
