Mini Pepper Bites

Cute little bell pepper bites make a deliciously healthy snack.

Ingredients
3 mini bell peppers, washed and seeded
3 tbsp. cottage cheese
pinch of dried parsley and oregano
salt and pepper

Directions
  1. In a bowl, combine cottage cheese with salt, pepper and herbs.
  2. Carefully stuff peppers with cheese mixture, and eat immediately.
