Pecan Pie


Serves: 10-12 slices, freezes well.
Prep Time: 15-20 min
Cooking Time: 45 min
Total:  60 min

Ingredients
Base
Thank you Lidia for this recipe.
3/4 cup butter
1 1/2 cups flour
1/3 cup sugar
1 tsp. vanilla
1 tbsp. water


Filling
1/4 cup butter
1 cup brown sugar, packed
3 eggs, one at a time
1/2 cup corn syrup
1 1/2 cup pecan halves
1 1/2 tsp. vanilla
1 tsp. salt
rind of 1 lemon

Directions
  1. To make the base, combine flour and sugar.  Cut in butter to make a crumbly mixture.  Add vanilla and water and combine.
  2. Press evenly into a 9-inch springform pan and bake in a preheated oven at 350F for 5-8 minutes. Note that it should not turn golden brown.
  3. Remove from oven and set aside.
  4. To make the filling, cream butter and brown sugar, adding an egg, one at at time.  Then, add corn syrup, vanilla, salt and lemon rind and stir until combined.  Then add pecans and fold into the mixture.
  5. Pour filling into prebaked base and bake for 40 minutes at 350F, until pie has set.
  6. Remove from oven and let cool for 30 minutes.  Carefully remove the springform pan and set on a serving plate.
  7. Store in a cool place, or freeze for later.
