Curried Zucchini and Apple Salad

Ingredients
2 zucchinis, washed and julienne peeled or grated
1 large apple, cored and cubed
1/4 cup raisins or dried cranberries
1 lime, juice
1-2 tsp. maple syrup
1 tsp. curry powder
1/2 tsp. ground cinnamon
1/4 tsp. ground cumin
salt and pepper, to taste
toasted pumpkin seeds or toasted unsweetened coconut flakes, to garnish (optional)

Directions
  1. In a large bowl add all ingredients. Toss to combine and taste, adjusting spices if necessary.
  2. Serve chilled, garnished with toasted pumpkin seeds.
