Ingredients
1 cup steel cut oats, quinoa or brown rice
1/3 English cucumber, diced
1-2 tomatoes, sliced or diced
1 large red, yellow or orange bell pepper, chopped
1 ripe avocado, sliced
1 carrot, peeled and grated
handful of greens such as arugula or baby spinach
1 cup plain chunky cottage cheese (optional)
salt and pepper, to taste
1/3 English cucumber, diced
1-2 tomatoes, sliced or diced
1 large red, yellow or orange bell pepper, chopped
1 ripe avocado, sliced
1 carrot, peeled and grated
handful of greens such as arugula or baby spinach
1 cup plain chunky cottage cheese (optional)
salt and pepper, to taste
Directions
- Cook grain as directed on package and divide into four bowls. Alternately, make the grain ahead of time and refrigerate. This works best for oats or quinoa. Simply microwave the portion needed before adding the vegetables.
- Serve each bowl garnished with a variety of all the vegetables, and a spoonful of cottage cheese. Season with salt and pepper to taste.
