Almond Tart

Serves:  8-10 slices, freezes well.
Prep Time:  15 min.
Cooking Time:  30 min.

Ingredients
Crust
1 cup flour
1/2 tsp. baking powder
2 tbsp. sugar
125 g butter or margarine
1/4 tsp. almond essence
2-3 tbsp. apricot jam

Filling
100 g sliced blanched almonds
125 g butter or margarine
4 tbsp. sugar
1 tbsp. milk, soy or almond milk
1 tbsp. vanilla


Directions
  1. In a large bowl, combine flour, baking powder, sugar, butter and almond essence to form a dough.  Using your hands, pat dough to form a base inside a round 9" dish.
  2. Spread apricot jam over uncooked base and set aside.
  3. To prepare filling, put almonds, butter, sugar, milk and vanilla into a sauce pan. Stir and heat. When butter and sugar melts, remove from heat.
  4. Pour filling on top of jam covered base.  Bake in a preheated oven at 350 F for 30 minutes, or until golden brown.
