1 large eggplant
1-2 tbsp. mayonnaise
1 tsp. lemon juice (optional)
salt and pepper
Directions
- Preheat oven at 350 F. Place eggplant on a baking sheet and poke a few holes in it with a knife.
- Bake eggplant for 45-50 min. Remove from heat and cool for 5-10 min.
- Open eggplant and scrape insides into a bowl. Mash any large pieces.
- Add mayonnaise, lemon juice, salt and pepper.
- Serve warm or cold with bread or pita, or in a sandwich.
