Baba Ghanoush


Prep Time: 5 min
Cooking Time: 45-50 min
Total: 60 min

Ingredients
1 large eggplant
1-2 tbsp. mayonnaise
1 tsp. lemon juice (optional)
salt and pepper


Directions
  1. Preheat oven at 350 F.  Place eggplant on a baking sheet and poke a few holes in it with a knife.
  2. Bake eggplant for 45-50 min. Remove from heat and cool for 5-10 min.
  3. Open eggplant and scrape insides into a bowl.  Mash any large pieces.
  4. Add mayonnaise, lemon juice, salt and pepper.
  5. Serve warm or cold with bread or pita, or in a sandwich.
