Hasselback Potatoes

Serves: 4
Prep Time: 5-8 min
Cooking Time: 50-60 min
Total:  55-65 min

Ingredients
4 medium sized potatoes, rinsed well
1 tbsp. butter or margarine
1 clove garlic, pressed
dried oregano or basil (optional)
salt and pepper

Directions
  1. Slice potato evenly every 5mm. 
  2. Mix garlic, butter and herbs together.  Using a knife, spread mixture in between each slice.  Sprinkle with salt and pepper.
  3. Bake on a parchment paper lined baking sheet at 400 F for 50-60 min.
