Ingredients
2/3 cup flour (whole wheat)
2 heaped tbsp. ground flax
1/2 cup oats
1/2 tsp. baking soda
2 tbsp. oil
1/4 cup unsweetened apple sauce
2/3 cup brown sugar
1 egg, scrambled
1 tsp. vanilla
1 tsp. lemon or orange zest
1 tsp. lemon or orange zest
1/2 cup dried cranberries (or more)
1/2 cup chocolate chips
Directions
- Preheat oven to 350 F and line a baking sheet with parchment paper. Set aside.
- In a large bowl, whisk together oil, apple sauce, egg and vanilla.
- Add flour, flax, oats, sugar and baking soda and mix until combined.
- Add cranberries and chocolate chips.
- Form heaped spoonful and drop onto prepared baking sheet.
- Bake for 10 minutes, or until golden brown.
- Cool for 4-5 minutes.
