Peach and Strawberry Cobbler

An easy to make and delicious cobbler is a perfect dessert when served with ice cream.

Serves: 6-8
Prep Time: 10 min
Cooking Time: 50-60 min
Total:  60-70 min

Ingredients
1 tin peach slices in light syrup (drain, but save syrup)
2 cups strawberries, sliced
1 cup flour (white or whole wheat)
1/3 cup sugar
1 1/2 tsp. baking powder
3/4 cup milk or soy milk
3 tbsp. butter or vegan margarine, melted
1/2 tsp salt
1 tsp. vanilla
1 tsp. cinnamon
1/2 lemon, juiced
1 tsp. corn starch and 1 tbsp. water (optional)

Directions
  1. In a large bowl, mix flour, sugar, baking powder, cinnamon and salt.
  2. Add milk, butter and vanilla to the flour mixture and mix well.
  3. Add lemon juice and mix.  If mixture is too dry, add some peach syrup.
  4. In the bottom of a glass baking dish (9" x 13"), mix strawberry and peach slices. 
  5. Dissolve cornstarch in water and spoon over fruit.  Also spoon about 5-6 tbsp. of syrup over fruit.
  6. Scoop batter in spoonfuls over top of the fruit.
  7. Bake in a preheated oven at 350F for 50-60 min.
  8. Serve warm with vanilla ice cream or plain yogurt.
