An easy to make and delicious cobbler is a perfect dessert when served with ice cream.

Ingredients
2 cups strawberries, sliced
1 cup flour (white or whole wheat)
1/3 cup sugar
1 1/2 tsp. baking powder
3/4 cup milk or soy milk
3 tbsp. butter or vegan margarine, melted
1/2 tsp salt
1 tsp. vanilla
1 tsp. cinnamon
1/2 lemon, juiced
1 tsp. corn starch and 1 tbsp. water (optional)
Directions
- In a large bowl, mix flour, sugar, baking powder, cinnamon and salt.
- Add milk, butter and vanilla to the flour mixture and mix well.
- Add lemon juice and mix. If mixture is too dry, add some peach syrup.
- In the bottom of a glass baking dish (9" x 13"), mix strawberry and peach slices.
- Dissolve cornstarch in water and spoon over fruit. Also spoon about 5-6 tbsp. of syrup over fruit.
- Scoop batter in spoonfuls over top of the fruit.
- Bake in a preheated oven at 350F for 50-60 min.
- Serve warm with vanilla ice cream or plain yogurt.
