Snack on a chewy oatmeal raisin cookie!

Ingredients
1 1/2 cups rolled oats
1/2 cup flour (white or whole wheat)
2 tbsp. ground flax seeds (optional)
1/2 tsp. baking soda
1/2 tsp. salt
6 tsp. butter or margarine, softened
1/3 cup brown sugar
1/4 cup white sugar
1 large egg
1 tsp. vanilla
1/2 cup raisins

Directions
- Preheat oven to 350 F. In a small bowl, soak raisins in a bit of water. Let stand for 5 min and then drain.
- In a medium bowl, cream together butter or margarine and sugars. Mix in egg and vanilla.
- In a separate bowl, mix together oats, flour, baking soda, flax and salt. Gradually add to wet mixture and mix until combined.
- Add soaked raisins.
- Drop rounded tablespoonfuls of dough onto two parchment paper lined baking sheets. Bake until cookies are golden brown but still soft, about 12 to 16 minutes.
- Cool on a wire rack and enjoy.
