Chewy Oatmeal Raisin Cookies

Snack on a chewy oatmeal raisin cookie!

Serves: 16 cookies, freezes well.
Prep Time: 10-15 min
Cooking Time: 12-16 min
Total:  25-30 min

Ingredients
1 1/2 cups rolled oats
1/2 cup flour (white or whole wheat)
2 tbsp. ground flax seeds (optional)
1/2 tsp. baking soda
1/2 tsp. salt
6 tsp. butter or margarine, softened
1/3 cup brown sugar
1/4 cup white sugar
1 large egg
1 tsp. vanilla
1/2 cup raisins

Directions
  1. Preheat oven to 350 F.  In a small bowl, soak raisins in a bit of water.  Let stand for 5 min and then drain.
  2. In a medium bowl, cream together butter or margarine and sugars. Mix in egg and vanilla.
  3. In a separate bowl, mix together oats, flour, baking soda, flax and salt.  Gradually add to wet mixture and mix until combined.
  4. Add soaked raisins.
  5. Drop rounded tablespoonfuls of dough onto two parchment paper lined baking sheets. Bake until cookies are golden brown but still soft, about 12 to 16 minutes.
  6. Cool on a wire rack and enjoy.
