Spiced peanut butter brings out the best in this baked tofu dish.

Ingredients
1 slab extra firm tofu
1/3 cup orange juice
3 tbsp. natural peanut butter
1 tbsp. sesame oil
1 tbsp. maple syrup or honey
1 tbsp. fresh ginger, grated
1 clove garlic, pressed
cayenne pepper

salt and pepper
sesame seeds

Directions
- Using a paper towel, press excess water from tofu. Cut into thin slabs.
- In a bowl, whisk together all sauce ingredients. Taste and adjust spices if necessary.
- Marinate tofu in a larger bowl or dish for a minimum of 30 minutes. Can be marinated overnight, by covering and refrigerating.
- Line a baking sheet with parchment paper and arrange tofu slabs so that they don't touch one another. Spread remaining sauce on tofu.
- Broil for 5 minutes and remove from oven. Carefully flip each slab, sprinkle with sesame seeds and return to oven for another 3-4 minutes.
- Serve warm or cold, as an appetizer (with extra sauce), in salad, or as a side with rice and vegetables.
